I have always marveled at the simplicity of a burrito restaurant concept when it comes to menu flexibility. They offer a finite number of ingredients but can nearly make an infinite number of products. The key is managing their purchasing options and limiting the number of ingredients. For example, buying one ingredient to make one item just increases your food cost. Try taking a lesson from your favorite burrito place and keep things simple.

To be fair, I think each of these restaurants offers some healthy food. But more importantly, these are the restaurants that volunteered to participate. Hopefully next year more "healthy" restaurants will sign up. (I notice a lot of chain restaurants are participating this year. Maybe smaller operations haven't heard enough about this program...and maybe diners asking operators about the Great American Dine Out will spur them to action next time.)
